Food poisoning is a global health issue that affects millions of people each year. Around 7 million individuals lose their lives due to this alarming condition out of a total of approximately 70 million reported cases worldwide1^. To avoid dangerous toxins, viruses, and bacteria, careful food preparation and storage practices are of utmost importance.

Food poisoning occurs when individuals consume contaminated food or beverages. This contamination can be caused by various factors, such as improper handling, unhygienic preparation conditions, inadequate cooking, or storage temperatures that are not ideal. Consuming such contaminated food can lead to severe illness or, in extreme cases, even death.

One of the significant causes of food poisoning is the presence of harmful bacteria, such as Salmonella, Campylobacter, and E. coli1^. These bacteria can be found in raw or undercooked poultry, eggs, meat, and seafood. When consumed without proper cooking, these bacteria can wreak havoc on the digestive system, leading to severe consequences.

Another common culprit behind food poisoning is viruses, such as norovirus and hepatitis A1^. These viruses can be present in contaminated water, improper hand hygiene, or unsanitary food preparation surfaces. Once ingested, they can cause acute gastroenteritis, resulting in dehydration, abdominal pain, and other serious symptoms.

Moreover, toxins produced by certain bacteria, such as Clostridium botulinum and Staphylococcus aureus, can also contaminate food and lead to food poisoning1^. These toxins can cause symptoms like nausea, vomiting, diarrhea, and, in severe cases, paralysis and even death.

Preventing food poisoning requires implementing proper food preparation and storage practices. Following these guidelines can significantly reduce the risk of contamination and subsequent illness:

  1. Maintaining Personal Hygiene: Regularly washing hands with soap and water before and after handling food is crucial. Additionally, wearing clean aprons or gloves while preparing meals can minimize the risk of cross-contamination.

  2. Separate Raw and Cooked Foods: Cross-contamination can occur when raw and cooked foods come into contact with each other. It is vital to use separate utensils and chopping boards for raw and cooked ingredients to prevent bacterial transfer.

  3. Safe Food Storage: Properly storing food at appropriate temperatures is paramount. Refrigerating perishable items, such as dairy products, raw meat, and seafood, at temperatures below 5°C (41°F) can hinder bacteria growth and extend their shelf life. Furthermore, frozen foods should be kept at or below -18°C (0°F) to maintain their quality and safety.

  4. Thorough Cooking: Cooking food to the recommended internal temperature can kill harmful bacteria and viruses effectively. Using a food thermometer can ensure that meat, poultry, and seafood are thoroughly cooked, significantly reducing the risk of contamination.

  5. Avoiding Cross-Contamination: Preventing cross-contamination is essential to avoid food poisoning. Keeping raw meats, poultry, and seafood separate from ready-to-eat foods, such as fruits and vegetables, can minimize the chances of bacterial transfer.

By adhering to these food safety practices, individuals can protect themselves and their loved ones from the devastating consequences of food poisoning. Promoting awareness about proper food handling and storage is equally crucial in reducing the overall prevalence of this preventable condition.
